There's nothing quite like homemade fresh latkes. Nothing. Not even the amazing Trader Joes frozen ones. They are easy to make in no time at all.

Ingredients:
4 Potatoes 🥔
1/2 Onion 🧅
2 Eggs 🥚
Salt & Pepper to taste 🧂
Oil for frying
Grater and/or food processor
Instructions:
Peel potatoes and place in water so they don't brown.
Grate half the potatoes (or half of each potato to protect your hands)
Place remaining potatoes and onion in the food processor
Remove as much liquid as possible from potato mixture using a strainer and/or squeezing with your hands.
Heat oil in heavy frying pan or dutch oven.
Add eggs and salt and pepper and mix.
Once the oil is hot place latke mixture in hot oil using a slotted spoon to remove any excess liquid.
Pat down slightly and gently.
Flip when sides begin to brown (about a minute and half) and then remove once the other side is done. Transfer to wire cooling rack or paper towels.
